Our award-winning “Tru Blue” cheese is made with finest USDA Grade A Sheep Milk anywhere from ewes that roam freely on our dairy farm here in Southern Oklahoma. Our milk, past the filtration stage, is chilled to 37 degrees and held to a maximum of 72 hours (3 days,) then pasteurized, reduced back to 93 degrees and processed for our cheese. From there, in a nearly month long process, it is cooled to 36 degrees fahrenheit for aging.
Our ready-to-eat 100% Lamb Stixs are created from the finest young lamb and without the normal industry added beef or pork fat. Lamb Stixs is an excellent and nutritious ready-to-eat true meat stick.
